What We Are Eating W/C 12th March 2016

It turns out that we really are eating cheaply this month. So far I've purchased fresh fruit, milk and of course some veggies, but generally the Children are helping me clear our the Food Storage! The good thing about this (apart from the saving of some money!) is that I'm also able to get a little more creative in creating tasty meals using the ingredients I have on hand!

Cheesy Beans on Toast with Chives

Even if I would be happy to just eat Cheesy Beans on Toast with Chives every night.

So, with all this in mind. This is what we are eating this week.


Saturday - Meatloaf and Mash


We had to change the Friday night meal from last night from Meatloaf and Mash to Top Ender's Pasta Salad that she made at School yesterday, because it's a waste if it doesn't get eaten otherwise and so Daddy will make the Meatloaf today instead.

I love Meatloaf, it is cheap, quick to make and tasty!

Sunday - Chicken Thighs


I found four recipes this week that seemed delicious and I was pretty certain that Daddy and the Children would like, so I sent him a quick link to all four and asked him to pick one. He decided that he liked the idea of the Herb Roasted Chicken Thighs with Potatoes the best and thought that he would have that this week.

It was my favourite out of all the recipes too! I'm just sad that I won't be eating it.

Meatless Monday - Veggie Stuffed Omelettes


I've never been sure if Eggs count as meat or not. From a Catholic side of things, I'm pretty sure they don't. From a Vegetarian side of things I'm pretty sure they do.

However, tonight we are having Omelettes and I know that BB hates them but I want a zero carb meal to do some over night testing on BB's Blood Sugars.

Tuesday - Home Made Pizza


We always have the ingredients for Home Made Pizza in the house. I mean a bit of flour, a bit of yeast, a splash of water, a slug of oil, a sprinkle of Salt and a slightly larger sprinkle of Sugar too.

Plus it is SOOOOOOOOOOO great to beat a pizza dough into submission after a long day.

BB and Tops love putting their own toppings on too, so it's a fun meal to make!

Wednesday -  Turkey Pasta Bake


BB and I have decided that a Pasta Bake would be yummy, especially after Top Ender made a great one last Friday. We decided that Top Ender will have to make it again when she gets home from School, but BB and I think that we might just make it our own way as a surprise for when Top Ender gets home from School!


Thursday - Jacket Potato and Tinned Spaghetti


I always preferred tinned spaghetti to Baked Beans and knowing that we have a can in the cupboard is driving me crazy, I just want to eat it! So I figure if the Children have it tonight with their Jacket Potatoes I will be spared the suffering.

Then I'll just sit here sadly looking at their meal compared to my own!



When I first did this meal plan (Monday lunch time) I wasn't sure what Top Ender would be cooking this coming Friday and I finally thought I should probably wait until I hear what it is before I plan what the Children and Daddy will eat.

Turns out Top Ender is able to pick anything from the items she has already made and make it again with changes if she wants and will be tested on it. She's decided to make Scones, so I need to plan an evening meal!


Friday - Turkey and Rice Casserole


I was really stuck on what to make for our meal today. I wanted to give the Children something that they would love and something that was healthy and obviously given my want for it to be a budget meal, something that a lot of the ingredients needed were already in my pantry, fridge or freezer!

I decided in the end to make the Turkey and Rice Casserole as you just combine, Turkey, Rice, Condensed Soup, Mushrooms, Onion, Peppers and a bit of Celery and bake it for about half an hour.

I'm pretty sure the kids will eat it, they might not love it, but they will eat it. So they can have Top Ender's Scones for pudding, with some Cream and Jam.
